Oh So Easy 75-Minute Artisan Bread (No Overnight Proofing!) (Home Recipe)
Confession time: I am a super impatient baker. I absolutely love homemade artisan bread (especially because I want to avoid heavily bleached flour), but the idea of waiting forever for dough to rise drives me crazy.
I’ve tried the famous "no-knead bread" recipes, and while they taste great, they have two major downsides for me:
You have to wait 4 to 6 hours at room temperature, plus another 12 hours in the fridge!
Dealing with that incredibly sticky, high-moisture dough is a nightmare!
I'm the kind of person who gets too excited about cooking. I can't just "forget about the bread" and wait. I want to check the dough every minute! That’s why I finally found my holy grail: The Perfect 75-Minute Artisan Bread. It only requires 8 minutes of kneading and is ready in just over an hour. Let's bake!
🛒 Ingredients
All-Purpose or Bread Flour: 3 Cups
Warm Water: 1 Cup
Sugar: 1 Tbsp
Active Dry Yeast: 1 Tbsp
Salt: 1/2 Tbsp
👩🍳 Step-by-Step Instructions
1. The "Face" in the Flour Make a mound with your flour and create three little holes in it. Add the yeast into one, salt into another, and sugar into the last one.
Wait... doesn't this remind you of a certain famous painting? (Yes, The Scream! 😱) Let's mix them well because we don't want that face staring at us! Pro tip: Make sure to mix the dry ingredients into the flour so the salt doesn't directly touch and kill the yeast.
2. Hydrate and Knead Pour in the warm water and start mixing. Once it comes together, knead the dough for just 8 minutes until it becomes smooth and elastic.
3. The Microwave Proofing Trick Cover the dough bowl with a hot, damp towel and put it in a warm place to rise. My secret: I put it inside my microwave because it's a great insulated space. BUT PLEASE DO NOT START THE MICROWAVE! You will bake your dough instantly and possibly burn your whole kitchen! 🚫🔥 Just leave it sitting in the closed (and turned off) microwave for 15 minutes.
4. Prepare the Oven (The Steam Secret) You don't need to preheat the oven yet. Instead, place a large oven-safe bowl filled with hot water on the bottom rack. This will create steam, which is the secret to a super crunchy artisan crust!
5. Shape and Score After 15 minutes, the dough might not look massively risen, but trust the process—it's okay! Shape the dough into a round loaf and use a sharp knife to score (scratch) the top.
6. Bake! Put the dough in the oven and turn the heat to 400°F (200°C). Bake it for 30 to 40 minutes until golden brown.

Tada!!! What do you think? Making a beautiful loaf of bread from scratch is that easy. I honestly haven't found any recipe quicker or easier than this.
The outside is super crunchy, and the inside is incredibly moist. If you cut it while it's piping hot, it might feel almost too moist (which I personally love!). But if you let it cool for a few hours, it sets perfectly and makes the most amazing sandwich bread.
It’s heavenly with just a simple spread of butter or your favorite jam.
