Watermelon Rind Salad (수박 나물), Bibimbab (수박나물 비빔밥)




Hi everyone!
As Hawaii doesn't have any other season than summer, 
watermelon is one of the most favorite fruits of islanders.

Then how about the watermelon rind?
Have you ever considered to eat them?
It's not very popular but Korean do eat watermelon rind.
Which is similar to cucumber and green papaya.
I'd like to share a watermelon rind salad (namul) recipe today.

Watermelon rind salad

<<ingredients>>
watermelon rind - 1/4 from big watermelon
salt -1/2 Tb
magic sauce - 2Tb

<<for the Magic Sauce>>
Gochujang(Korean pepper paste) 2Tb
Sugar 1Tb
Shoyu 1ts
Minced garlic 1ts
Sesame seed(if you have)

 Peel the rind very carefully. 
The outside is bit hard to chew. Use sharp knife, not the peeler.
Get rid of all the red inside too.


Slice them very thin.


Sprinkle salt and wait over 30min for osmotic pressure.  


When the rind turn to transferent, squeze them well.


Put them in a bowl,


Mix them with the magic sauce.


Now it's yummy, crunch, sweet and spicy watermelon rind salad!!!


Whwnever I make this salad, I make bibimbab.
Rice, vegetables, watermelon rind salad, sunny side up!!



Add magic sauce for better taste.
Yummy!!!

Shrimp Avocado Pizza (새우 아보카도 피자)

Aloha!
It was rainy today here in Hawaii 
but nobody really care enough to carry an umbrella.
That's the island life style I like a lot.

Bare face, bare feet...
If you live in Hawaii,
you will really learn what's the freedom that our mother nature gives to us.
Speaking of nature, I'd like to share some fresh pizza recipe today.




Since I'm Korean, I usually make things bit spicy,
but today, I'll talk about super soft, creamy ingredient.
Yes, it's avocado!!!
I love it's green color and creamy, nutty taste.
I like it hundred times better than almond butter or peanut butter.
The color scheme of this pizza is mouth watering.

I believe everybody has their own pizza dough recipe.
So I'll show you just toppings.

<<ingredients>>
pizza dough - 300gram
avocado - 1
shrimp -1 cup
grape tomato - 15
fresh basil (chopped)  -2Tb
olive oil
garlic powder -2Tb
cheese -fresh mozzarella, Parmesan, cheddar
salt, pepper


First of all, preheat oven for 400F (200C)

 

Brush olive oil on the pan.
Flatten the dough, poke to prevent rising.
Brush olive oil on the dough, sprinkle garlic powder and Parmesan.
Bake it for 8min.

 
 
Cut all the other ingredients.


 Remove pizza dough from the oven.
Brush olive oil again on the crust.
Add cheddar and tomatoes and shrimps.


Add Mozzarella cheese.
Some pepper and pinch of salt.
 

Bake 16-20min until the cheese turn to golden brown.
 

Add avocado slices and chopped basil.
More Parmesan is a plus.
 

Yay!!! So easy if you have a dough.
I always prepare the dough in the freezer.
 

Yummy!!!!


Isn't it pretty?

Spicy Anchovy Pasta (매운 엔쵸비 파스타)


Anchovy is one of the most useful ingredients for Korean food.
We use dried anchovy stock for most of the soup and jjigae.
We make sweet dried anchovy fry, myul chi bok um(멸치볶음)
and most importantly, we use fermented ancovy juice for making Kimchi.

When I first opened a canned Italian anchovy,
I was super excited :)
I expected some smelly fishy fermented anchovy
but it wasn't!
Italian Anchovy has so much flavor and can be loved from everybody.
Now I'm recommending this to my Korean friends :)

Spicy Anchovy Pasta
 
Ok, what can you guess if I, a Korean lady make anchovy pasta?
Yes!!! It's SPICY :D
Ready to burn your mouth? Let's start!!

<<Ingredient for 2>>
anchovy - 1can
pasta(spaghetti or linguine) - for 2 people
garlic-6 cloves
onion - 1/3
green onion - 2
 dried Thai red pepper - 2 piece(if you are Korean, you need 1~2 more)
olive oil
NO SALT!!!!!

 

This is the anchovy in olive oil I've used. 


Cook the pasta without the salt.
Anchovy is already super salty.


Open the can. Yummy!!!!
Dice the anchovy.


Fry sliced and chopped garlic, onion, green onion
with the olive oil from anchovy can.(medium heat)

 

Add anchovy and Thai pepper.
I cut the pepper into really big pieced so that I could easily get rid of those.
Lol!! Yes...It was too spicy for me!!(shame...)

Add pasta, fry together.
If the pasta is too dry, add some water(2~3Tbs)
Mix them really well to prevent those salty anchovy 
won't stick on only one side of your pasta.


Done!! Actually it's really easy to make!!


It takes about 15~18min.
If you don't have any idea for dinner, 
or you are too tired to cook dinner,
Why don't you cook anchovy pasta?

Steamed salmon without odor in your house(냄새없는 연어찜)


Hi!
Today, the weather is so beautiful in Hawaii.
As much as I love the nature, I love healthy food, local ingredients, organic stuffs.

For our daily required protein, the best ingredients are low fat chicken, fish and tofu.
I love fish and tofu, but cooking fish is very unpleasant.
If I fry them, I have to deal with the fish odor for several days.
I can't use my huge oven too. 
For cooking one piece of fish...it's waste of energy.
So I prefer foil steaming.

Foil steamed salmon


If you cook your fish this way, you don't need to worry about odor and smelly pan.
Let's start!

<Ingredients>
frozen salmon from Costco -1 piece (thawed)
salt, pepper, dried herb
bay leaf-2
white wine or sake-2Tb
olive oil-1Tb
1ts of soy sauce and sesame and green onion -optional



 
Put the foil on the pan. Rub olive oil on the salmon.
Sprinkle salt, pepper, herbs.
Add bay leaf and white wine.
Fold the foil but give some air space on the top like salmon in the foil balloon!
Try not to make any small hole.

Pour 1 cup of water outside of foil.

 Cover and cook 10-15min until the water all boil down.
Remove from heat, wait for 1-2 min.


Open it with care.
The hot steam inside of foil can be dangerous.



 Tada! Yummy salmon.
I sprinkled sesame seeds, green onion and 1ts of soy sauce.

Very moist!!
 

Nom nom nom~~

Dak gangjung (닭강정) Sweet and spicy chicken

 Aloha~
Today, I'd like to share a fried chicken recipe.
Korean people really likes fried chicken as much as American does.
However, we have so many different types of fried chicken.
KFC??? Please go home. No offense but there are so many other yummy things to try in Korea.
Spicy fried chicken, soy sauce fried chicken, baked chicken with Chinese medicine sauce, pop corn chicken...a lot!!
One of the most famous kind is Dak gangjung.

Dak gangjung

Dak(chicken) gangjung(boiling down with some sweet sauce) is light fried boneless chicken with yummy sauce.You can topping with crushed peanut or sesame seed.
I added rice cake for fun.



<<Ingredients>>
chicken breast-2 pieces (chicken thigh is even better)
(marinate sauce : sake-2Tb, soy sauce-1Tb, ginger powder -1/2Tb, pepper)
chicken batter-1/2cup or more starch powder
rice cake-10 (if you have)

<<For the sauce>>
gochujang(Korean pepper paste), ketchup, any jam(NOT citrus kind), Tabasco, soy sauce, Mirin, honey,minced garlic - each 1Tb (It's spicy. you may change Tabasco to just  ketchup)
sesame oil-1/2Tb

<<For the topping>>
any kind of crushed nut or fried sesame seed 





  I used this coastal range organic chicken breast from Costco.
Please note that chicken thigh tastes a lot better.


Cut the chicken for one bite size and marinate over 30min.

Mix all the ingredients for the sauce.


After 30 min of marinate, mix with starch.

 Deep fry the chicken.


Once....


And put them all back into the pan.


Fry twice. then you are all ready.


Deep frying  rice cake is very dangerous. 
It pops like popcorn.
Try not to over fry to prevent stone hard outside.



Get rid of extra oil with the kitchen towel.

Boil the sauce in non stick pan and stir the chicken and rice cake.
You are coating those with the sauce.
When the sauce covers every ingredients,,,
 

Voila!!!


Yummy yummy chicken.
I'm warning you. It's SPICY!!!!


Yub!!! You need a bottle of nice beer.

Dak gangjung and whole wheat tomato pizza + beer!!!

If anybody ask if you like fried chicken, now you can say 
"Yes, I like dak gangjung"
