Spicy Salad with Fried Dumplings: Bibim Mandu (Home Recipe)

Aloha! 🌺 It’s Jihye in Seoul.

Today, I'd like to share a super fast, insanely delicious recipe for your weekend snacking. Let's be honest, everybody loves anything deep-fried, right? It's the ultimate guilty pleasure!

However, sometimes a plate full of deep-fried food can feel a bit too heavy or greasy. So, I decided to balance it out by adding a mountain of fresh, crunchy vegetables tossed in a sweet and spicy kick. We call this Bibim Mandu (비빔만두), which literally translates to "Mixed Dumplings."

A delicious plate of crispy golden fried dumplings served with a fresh green salad tossed in a red, spicy Gochujang dressing.

The result? Absolutely yummy! You will definitely want more. And as always in my kitchen, it's super easy to make.

🛒 Ingredients

For the Base:

  • Fried Dumplings: 8 pieces (or more!). (💡 Jihye's Pro Tip: I highly recommend using Bibigo Mandu—either their Gyoza or Pan-Fried dumpling varieties. They are the absolute best and readily available in most Asian grocery stores!)

  • Salad Mix: 1.5 Cups (Spring mix, shredded cabbage, or any crisp lettuce works great)

For the Spicy Sweet Sauce:

  • Korean Gochujang (Red Pepper Paste): 2 Tbsp (Not sure which brand of Gochujang to buy? 🛒 Check out my Ultimate Korean Grocery Guide here!)

  • Sesame Oil: 1 tsp

  • Honey: 1 Tbsp (or less, depending on your sweet tooth)

  • Vinegar: 1.5 tsp

  • Roasted Sesame Seeds: A sprinkle (Optional, but highly recommended)

👩‍🍳 Step-by-Step Instructions

1. Fry the Dumplings Pan-fry or deep-fry your dumplings until they are beautifully golden and crispy on the outside. Place them on a paper towel to remove any excess oil.

2. Make the Sauce In a small bowl, mix the Gochujang, sesame oil, honey, and vinegar together until it forms a smooth, glossy dressing.

3. Toss the Salad Right before serving, drizzle the spicy sauce over your fresh salad mix and toss them together. (You can also serve the sauce on the side if you prefer to dip!)

4. Mix and Eat! Plate your crunchy salad right next to (or on top of) your crispy dumplings. How simple is that?

Eating deep-fried dumplings with a spicy, refreshing salad is so much better than eating them alone. You don't need to worry about a lack of vitamins, and the cool salad prevents you from burning your mouth on the hot dumpling juice! The texture of the crunchy greens and the crispy fried dumpling skin goes perfectly together.

The only problem is... you might crave this a little too much. 😉
