Chicken Yuk gae jang (닭계장)-The way I eat Costco chicken

Do you like shopping from Costco?
Then you must like this reasonable yummy Costco treat.


Costco rotisserie chicken!!
However it's bit too much for two of us 
and we don't care about dry chicken breast very much.
So.....I always make this Korean soup using the leftover.

If you are crazy about Korean food, you must know yuk gae jang(spicy vegetable beef soup). You can call this as Dak(chicken) gae Jang.
It is so easy to make with left over Costco chicken.

 

Isn't it look yummy? 
Whenever I cook this soup, I can't control myself.
Big bowl of rice and Kimchee....and...no conversation! Lol!!!
Let's start!

<Ingredients>
Costco rotisseri chicken leftover with bones
Chicken broth spice(1 garlic clove, 1 bay leaf, 3 green onion root, whole pepper corn)
Bean sprout - 1 small bag
Enoki mushroom - 1 pack
Green onion - 1bunch
Red chilli pepper powder, La yu(pepper oil), salt, pepper

First of all, please debone the chicken.
I don't use any skin, fat and the small tail part(very oily and not healthy)

Put the bones in the boiling water.
Add 5 garlic clove and white part of green onion and 1 bay leaf.
Oh...some whole pepper corn too.
Medium heat, boil over one hour.

Prepare vegetables. Bean sprout and enoki mushroom and green onion.

When the broth is fully cooked, drain the soup on cotton or wet kitchen paper.
This will help to get rid of any extra oil.

I usually wash kitchen paper with hot water before I do this.

Add chicken meat, all vegetables, La yu(pepper oil) and chilli pepper powder as you desire.
Salt and pepper as much as you want.


Don't cover when you cook bean sprout to prevent bad bean smell.


 It takes time but the recipe is easy.
Rotisseri chicken had seasoned already so I didn't need to use much salt.

Coach's Oat : Berry almond oatmeal


Recently I bought this interesting patented oatmeal from Costco.
It's neither steel cut oat nor rolled oat but you can cook it in 3-5min.
They said that they cracked and baked it.


You can see golden brown oat. 
No wonder they baked this. 
I didn't know raw oat(actually baked but..) can be this delicious.
Once you try this, you will be inspired to make oat cookies.


<Make 2 bowls of oatmeal>
Boil 2cups of water and cook 2/3 cups of oat on medium heat.
I added some cinnamon and 1tablespoon of cream.

After 3min, move it from the stove and cover.

Wait 1 more min.

Tada!!! done!! it really tastes like steel cut.
Very nutty and not too mushy.
You can cook it from microwave too.
I'm ok with cooking my oatmeal on the stove top
but...can't wait my steel cut for 40 min every morning.


Berries and almonds with some maple syrup :)
